I see one starter kit at your recommended site has a grinder and another one doesn't. Do I need one if I am just starting out?

You can use a grinding stone when you are just getting started which is a lot cheaper than en electric grinder. You will definately want a grinder if you can afford it and will be doing more than a few small projects.
